Le piment tient son nom de la ville de Xalapa, au sud-est du Mexique.<br \/>\nIci en Europe, nous connaissons surtout les pr\u00e9parations de fruits en conserve, g\u00e9n\u00e9ralement coup\u00e9es en tranches.<\/p>\n<p>Les jalape\u00f1os frais sont g\u00e9n\u00e9ralement r\u00e9colt\u00e9s verts, donc pas encore m\u00fbrs. Dans la cuisine mexicaine, ils sont surtout utilis\u00e9s pour les salsas, tandis qu'au nord de la fronti\u00e8re, dans les \u00c9tats du sud des \u00c9tats-Unis, les \"jalape\u00f1o poppers\" sont tr\u00e8s populaires, c'est-\u00e0-dire des piments farcis au fromage et ensuite frits. Outre la mise en conserve du piment, il existe une autre mani\u00e8re tr\u00e8s int\u00e9ressante (et tr\u00e8s savoureuse) de conserver le jalape\u00f1o : Les chipotles.<\/p>\n<p>Comme le piment a une chair relativement \u00e9paisse, il ne se pr\u00eate pas bien au s\u00e9chage \u00e0 l'air libre, contrairement \u00e0 d'autres piments, comme le piment italien.<br \/>\nC'est pourquoi les fruits m\u00fbrs sont conserv\u00e9s par fumage. Le fumage ne se fait pas avec n'importe quel bois, mais avec le bois du mesquite, ce qui conf\u00e8re aux chipotles leur ar\u00f4me fum\u00e9 typique. Les chipotles peuvent \u00eatre achet\u00e9es enti\u00e8res, en poudre ou en p\u00e2te. Elles sont surtout utilis\u00e9es dans les plats mijot\u00e9s et les sauces. Pour que les piments d\u00e9veloppent leur go\u00fbt, ils doivent \u00eatre cuits relativement longtemps, contrairement aux p\u00e2tes qui peuvent \u00eatre utilis\u00e9es comme assaisonnement ult\u00e9rieur.<\/p>\n<p>Mais un chipotle n'est pas simplement un chipotle : outre les chipotles typiques, fabriqu\u00e9s \u00e0 partir des fruits rouges m\u00fbrs, il y a aussi le morita, une variante qui est fum\u00e9e moins longtemps et donc un peu plus tendre, le chico, un chipotle fabriqu\u00e9 \u00e0 partir du fruit encore vert, qui \u00e9tait \u00e0 l'origine fabriqu\u00e9 \u00e0 partir des fruits qui ne se vendaient pas sur le march\u00e9 et qui n'\u00e9taient plus tr\u00e8s frais.<\/p>\n<p>Les capones, sont la variante la plus ch\u00e8re, car ils sont fabriqu\u00e9s \u00e0 partir de jalape\u00f1os sans p\u00e9pins.<br \/>\nJe lis que le nom chipotle vient de la langue azt\u00e8que nahuatl, c'est d'ailleurs les Azt\u00e8ques qui ont d\u00e9velopp\u00e9 cette forme de conservation. Je tombe \u00e9galement sur les termes Chipoctli et Pochili.
