Mais elles ont toutes un point commun : le piquant. Celle-ci peut \u00eatre plus ou moins intense, agr\u00e9ablement chaude ou ardemment br\u00fblante. La substance qui en est \u00e0 l'origine s'appelle la capsa\u00efcine. Cet alcalo\u00efde d\u00e9clenche chez les mammif\u00e8res une irritation due \u00e0 la chaleur ou au piquant sur certains r\u00e9cepteurs.<\/p>\n<p>En m\u00e9decine traditionnelle, la capsa\u00efcine est surtout utilis\u00e9e contre les douleurs musculaires et articulaires et des recherches sont toujours en cours dans le domaine du traitement des douleurs neuropathiques.<br \/>\nLe piquant est indiqu\u00e9 en unit\u00e9s Scoville (SHU = Scoville Heat Units). L'\u00e9chelle d\u00e9crite par Wilbur Scoville va de 0 SHU (absence de piquant) \u00e0 un maximum de 16 millions SHU (capsa\u00efcine pure sous forme cristalline).<br \/>\nIl s'agit de mesurer la quantit\u00e9 d'eau n\u00e9cessaire pour diluer le piquant en dessous du seuil de perceptibilit\u00e9. <\/p>\n<p>Je tombe tout de suite sur un exemple qui ne me dit pas grand-chose au premier abord : Pour neutraliser une goutte de gousse de naga jolokia indien, il faut en moyenne 850'000 gouttes d'eau, ce qui signifie que son piquant est de 850'000 SHU.<br \/>\nJe cherche des mesures que je peux relier d'une mani\u00e8re ou d'une autre \u00e0 des exp\u00e9riences de vie. Ainsi, je vois qu'un poivron se situe entre z\u00e9ro et dix SHU, le tabasco a entre 2500 et 5000 SHU et les jalape\u00f1os peuvent m\u00eame atteindre 8000 SHU, selon le type.<br \/>\nJe me souviens de diff\u00e9rents repas et, peu \u00e0 peu, l'\u00e9chelle de Scoville prend tout son sens : le naga jolokia est donc environ 100 fois plus piquant qu'un jalape\u00f1o.<\/p>\n<p>Je regarde si je peux trouver des informations sur le poivre de Kampot et je tombe sur quelque chose que je n'ai heureusement jamais eu \u00e0 manger : un spray au poivre.<br \/>\nLe spray au poivre du commerce poss\u00e8de 2 millions de SHU alors que la police am\u00e9ricaine, par exemple, en manipule 5,2 millions. 5,2 millions de SHU, c'est plus de six fois le Naga Jolokia et plus de mille fois le Tabasco. J'essaie encore une fois de me l'imaginer.
