La zone de culture est clairement d\u00e9limit\u00e9e et se trouve dans la province du m\u00eame nom, au sud du Cambodge. Les sols argileux lourds et min\u00e9raux ainsi que les conditions climatiques assurent d'excellentes conditions pour la culture du poivre. La culture se fait de mani\u00e8re traditionnelle, sans engrais artificiels ni substances chimiques. La plante d\u00e9veloppe des drupes qui, selon leur degr\u00e9 de maturit\u00e9, sont r\u00e9colt\u00e9es sous forme de poivre vert, noir ou rouge.<\/p>\n<p>Dans notre plantation, nous ne produisons en principe que du poivre de Kampot rouge et noir. Nous ne produisons du poivre de Kampot blanc que lorsque les fruits rouges sont bless\u00e9s et que nous devons donc retirer la peau. Il en r\u00e9sulte un poivre puriste, exempt des tons de moisi qui apparaissent souvent dans les productions de poivre traditionnelles. Au d\u00e9but de la croissance, tous les grains de poivre sur les panicules sont verts.<\/p>\n<p>Pour le <a href=\"https:\/\/www.raffinessen.ch\/fr\/webseite\/shop\/\">de poivre noir<\/a> les fruits sont r\u00e9colt\u00e9s juste avant leur maturit\u00e9, lorsqu'ils pr\u00e9sentent une couleur vert-jaune. Gr\u00e2ce \u00e0 une enzyme pr\u00e9sente dans la pulpe, le poivre fermente pendant le s\u00e9chage au soleil et devient noir.<\/p>\n<p>Les plantes de poivre n'ont pas la force de faire m\u00fbrir compl\u00e8tement tous les fruits, seuls 20% environ peuvent se d\u00e9velopper jusqu'au stade rouge m\u00fbr.<\/p>\n<p>Pendant la p\u00e9riode de r\u00e9colte, les fruits rouges arriv\u00e9s \u00e0 maturit\u00e9 sont cueillis quotidiennement \u00e0 la main. La cueillette des fruits m\u00fbrs doit se faire avec beaucoup de soin afin d'\u00e9viter d'endommager la peau sensible. Les grains sont blanchis dans de l'eau chaude, puis s\u00e9ch\u00e9s au soleil. La maturation des grains augmente la teneur en sucre de la pulpe, ce qui conf\u00e8re au poivre des notes douces et fruit\u00e9es. Parall\u00e8lement, la teneur en pip\u00e9rine du noyau reste intacte, ce qui conf\u00e8re au poivre un piquant puissant.<\/p>\n<p>En juin, \u00e0 la fin de la saison, toutes les plantes sont r\u00e9colt\u00e9es. Les panicules sont examin\u00e9es \u00e0 la recherche de baies rouges et les baies bless\u00e9es sont \u00e9limin\u00e9es. Les baies restantes sont transform\u00e9es en poivre noir.<br \/>\nNous ne connaissons que deux r\u00e9gions de culture dans le monde o\u00f9 le v\u00e9ritable <a href=\"https:\/\/www.raffinessen.ch\/fr\/webseite\/shop\/\">poivre rouge<\/a> peut se d\u00e9velopper jusqu'\u00e0 la pleine maturit\u00e9 : Pondich\u00e9ry en Inde ainsi que la r\u00e9gion de Kampot au sud du Cambodge. Dans ces deux r\u00e9gions, le poivre rouge pousse \u00e0 proximit\u00e9 des c\u00f4tes. En raison des conditions climatiques particuli\u00e8res de ces r\u00e9gions, les fruits peuvent se d\u00e9velopper plus longtemps sur l'arbuste et atteindre ainsi leur pleine maturit\u00e9. Les fruits sont r\u00e9colt\u00e9s \u00e0 pleine maturit\u00e9, tremp\u00e9s pendant plusieurs jours dans de l'eau froide courante, puis la pulpe est lav\u00e9e \u00e0 la machine. Il ne reste que le noyau clair du poivre. Les inconv\u00e9nients de ce mode de production sont la consommation \u00e9lev\u00e9e d'eau et le fait que les grains restent trop longtemps dans l'eau pollu\u00e9e. C'est de l\u00e0 que proviennent les fameux tons de moisi dans le poivre blanc.<\/p>\n<p>Chez nous, le poivre blanc n'est produit que lorsque les fruits du poivre arriv\u00e9s \u00e0 maturit\u00e9 sont endommag\u00e9s par des facteurs environnementaux tels que la pluie ou le blanchiment. Les grains concern\u00e9s sont tri\u00e9s par nos collaborateurs, enti\u00e8rement d\u00e9barrass\u00e9s de leur enveloppe et trait\u00e9s s\u00e9par\u00e9ment. Le bouquet caract\u00e9ristique de notre poivre blanc de Kampot est pur et exempt de notes manquantes de moisi.
